Random Things

Here are some random things for you today!  I got my new toys in the mail today!  I invested in a set of resistance bands for my upcoming program.  Found them on Amazon…very inexpensive!  Click here or on the picture to take you to Amazon to order some for yourself!  This set even came with a great carrying case so these will be perfect for getting workouts in while traveling!

Moving on in no particular order!  I love coffee and I love my pet themed coffee mugs – I have one for my cats and one for my dog!

Here was my lunch sometime this past week.  I used to be “afraid” of avocados because of their fat content.  But I know better now and enjoy these “good-fat” fruits often!

Found this TUB of dates at Target!  They are organic too!  Very excited about this because I usually can only find whole dates at our co-op and they are super expensive.

Why?

IMG_4924Another story for you. It all started on a cool November evening (last night). I was happily drinking my water at work and avoiding the Diet Coke, when a to-go order was mistakenly made. Hmmmm…a whole bag of free tasty food. “I’ll take it.” I said. Chris would be very happy to have a big ol’ serving of pasta and chicken! There was also some bread and salad.

As the night progressed, I grew more and more hungry. Like starving. As I drove home with the bag of food sitting next to me and my stomach rumbling, I thought “I’ll have a little bit of that bread and garlic butter” and “I’ll have some of the pasta too since the sauce is meatless” and “salad – that is healthy.”

I walked in the door. Chris was starving too as he spotted the bag of food. And just like that we ravenously ripped open the plastic bag and ripped open the cardboard boxes.

We shredded the tin foil as we peeled it off the wrapped bread. We ripped the bread apart with our hands and dunked it into the small butter cups – no cutlery was necessary. It was like a snow storm of disposable wrappers, containers, and food.

We stood in the kitchen over the countertops while we inhaled and shoveled food into our mouths! No talking. Just eating. And within minutes ALL was gone. Bread, butter, pasta, salad, more bread, more butter. The counter was littered with empty containers, crumbs of bread, butter stains, and smears of red pasta sauce. It reminded me of murder scene in a way.

BUT I didn’t stop there! No, then I needed SUGAR! IF there had been any type of candy/chocolate/cake in the house it would have been bad. But there wasn’t. What did I turn to?!?! The damn Kashi Bars! Why? Why? Why?

Again, I KNOW I am not the only one that does these crazy things. It is truly like something possesses me. But it’s a NEW DAY! Here’s to a more balanced brain today!

How to Open a Pomegranate

Vegan Alfredo Sauce

IMG_4835Take a guess at what makes this THICK, CREAMY, DECADENT, “CHEESY” sauce? It’s VEGAN and 100% clean eating deliciousness!

This creamy comfort food is made with cashews, a potato, and a can of white navy beans!  Here’s how to make it!

Vegan Alfredo Sauce
*1 cup cashews (soaked for an hour or more depending on your blender)
*1 cooked potatoe
*1 can white navy beans
*vegetable broth
*salt
*pepper

Soak the cashews for about an hour in water (more if you don’t have a very powerful blender).  Bake or boil the potato.  You can keep the skin on!  Put all the ingredients into a high power blender with some vegetable broth!  I didn’t measure how much broth I used.  I just kept adding it until it was the consistency I wanted.  SUPER easy!  You could also add in garlic and onion if you wanted!  Salt and pepper to taste!  Pour it over veggies or brown rice noodles or just eat it by the spoonful!  I used mine as a soup base with wild rice!

Kate’s Black Bean “Burger” Salad

You know how when you eat a delicious burger with lettuce, tomato, onions, ketchup, and mustard all the condiments just blend together with the lettuce into a creamy deliciousness?! Here is a way to get that taste and satisfaction but WITHOUT all the unwanted calories! I used to LIVE off this salad back in the day and forgot about it until recently!  Here’s how to make it!

Kate’s Black Bean “Burger” Salad Recipe

*spinach, kale, or other dark leafy greens

*1 onion

*1 cup black beans

*1 pickle spear

*1 Tbsp ketchup

*a quirt of yellow mustard

*cherry tomatoes

Cook up the onion with a tad bit of butter on medium low heat for about 15 minutes or until your liking.  You could just put in raw onion too (if you like that).  Add 1 cup of black beans to the pan to heat up.  Chop up the pickle spear into tiny chunks.  Combine all ingredients in a bowl, mix up, and pretend you are biting into a JUICY burger!  You can also get creative and add other tasty things like mushrooms!  Enjoy!

Tips for Eating Out With Self Control

We eat out A LOT!!! How do I keep myself under control?  Here are a few tips for eating out with self control.

1) Order something I WANT but make a healthy modification (fruit instead of fries and then I just eat some of Chris’s fries…hehe)
2) Ditch lots of the sauces (here I scraped off the sour cream)
3) Eat SLOW
4) Drink LOTS and LOTS of water while eating slow
5) Leave LOTS on my plate and take home for later

Not only do I fill up FAST by eating slow and drinking lots of water, I also take a lot home so I get two meals out of it therefore saving $$$!

Lost All Control

Wha…What just happened?!? Last night I was craving a sweet treat. My mom had given me a huge bag of Kashi bars the day before (don’t ask me why I accepted them knowing I have very little self control). I peered into the bag and picked one out…dark chocolate coconut. Mmmmmmm. I thought “ok, I will just have one…” I thoughtfully enjoyed the treat, ate it slowly, and really savored it. THEN an alien invaded my body and took over my brain! I lost all control. As if someone pushed the “speed x5” button, within 3 minutes I had INHALED 2 MORE Kashi bars. Why? Why? Why? As I regained consciousness, I saw the empty wrappers and cringed.

Ok, so maybe it wasn’t an alien and maybe I actually didn’t lose consciousness, but when things like this happen I do feel like a crazy person! Please tell me this has happened to you before in some way, shape, or form (maybe not with Kashi bars but some other type of food)…

21 Day Holiday Squeeze Challenge

****THIS IS HAPPENING!!!****

I WILL NOT endlessly eat this holiday season!! I WILL NOT endlessly eat this holiday season!! I WILL NOT endlessly eat this holiday season!!

I will squeeze in healthy habits every possible day between Thanksgiving and Christmas to stay on track (will I stay 100% on track every single day during the holidays? No. That’s unrealistic for me.)
