Clean Eating Wildtree Snack

A quick clean eating snack/light lunch! I keep a big tub of brown rice or quinoa (depending on the week) in the fridge all week! When I’m hungry I pick a Wildtree seasoning blend and sprinkle it in with some chopped peppers! Today’s pick was Mediterranean Dry Rub! Soooo flavorful and satisfying! Clean Eating Coconut Peanut Stir-Fry Veggies With Brown Rice

12038407_307298599440525_3077286639511103198_nFor those who were wondering, I did end up getting off the couch!  I sweat my be-hind off to PiYo Sweat (appropriate title).  And then I cooked dinner!

Just call me Rachel Ray!  I just created a recipe that rivals our favorite Chinese place!!!!!  Clean Eating Coconut Peanut Stir-Fry!

Clean Eating Coconut Peanut Stir-Fry Recipe:

2 bags of frozen stir-fry veggies
4-5 cups of instant brown rice
1 tbsp coconut oil (unrefined)
3 tbsp PB2 (powdered peanuts – can find it at Target)
1 tbsp Braag’s Liquid Aminos
1/3 cup water

Cook the rice in the microwave (or if you are like me you have a huge bowl of it in the fridge ready to go). Add the coconut oil to the pan on med-low heat. Add the frozen veggies and let cook for bit until they are thawed a bit. Add the rest of the ingredients and stir. Cook until the veggies are tender! Serve them over the brown rice!

This all took me about 15 minutes (holy time saver) and I have a tasty lunch for tomorrow!

Chocolate Cherry Shakeology Recipe

Didn’t have any cold coffee for my shake today so I got creative and made THIS today and OMG…new favorite!!!!!!  For those of you that have Vanilla Shakeology.  You can add 1 tbsp. of pure 100% cocoa (find it in the baking section) to make it chocolate!!

  2. Health & Fitness Coaching (keeps me healthy and happy 🙂
  3. They BOTH allow me to create (my most favorite hobby of all 🙂

Now to figure out the whole balance thing!  School starts tomorrow and I am terrified of how I will manage my time…I WILL commit to my health goal this year above anything else!

Sore Muscles

I have some majorly sore muscles today after Piyo Drench kicked my butt!  Better than feeling sorry though!

Piyo Drench Preview

Our September Challenge Group starts in about a week and I have been trying out all the Piyo workouts.  Here is a Piyo Drench preview.  Yes, I was completely drenched and needed many many breaks!  I cannot wait to see what these will do to me in 60 days!

PiYo Sweat! Holy Cow!

Just finished PiYo Sweat and was very humbled throughout the entire video. Lost my balance at least 2,629,981 times and again was shaking uncontrollably…but I LOVE and will get better and better with time!
